The Pedro Ximénez grape, a key ingredient in Montilla’s renowned sweet sherries, thrives in the region’s dry, sunny climate and chalky soils. Visiting one of Montilla’s traditional bodegas is a must-do experience, offering insight into the centuries-old winemaking techniques and the distinct flavors that define the region.
